Summer’s First Sip: Stripes, Sunshine & A Blueberry Mint Cooler

Happy Friday, gang! There’s nothing like that first true taste of summer—longer days, sun-drenched afternoons, and fresh flavors that make entertaining easy and fun. This week, we’re embracing all of it with an outfit lineup that celebrates casual summer style: stripes, a refreshing Blueberry Mint Cooler, and a seasonal flatbread that brings together summer vegetables and herbs with just a kick of heat. Whether you’re hosting friends or keeping things simple with family, today’s post is all about celebrating the slow joys of early summer.

Vineyard Vines Summer Sweater Tank | Navy Linen Shorts | Steve Madden Hayden Slide Sandals (Hermes Dupe)

Stripes are a summer classic for a reason—they’re timeless, cheerful, and always feel pulled together. I paired this striped Summer Sweater Tank with Navy Linen Shorts for a look that’s equal parts effortless and elevated.

I love the Hayden Slide Sandals, which are a great Hermes dupe. They keep things casual but chic, making this outfit ideal for everything from patio happy hour to a quick run to the farmer’s market.

Kelly’s Casual Summer Style

Madewell Denim Emmett Short | Similar Blue Striped Oversized Shirt | Everlane The Day Crossover Sandal | Similar Braided Leather Belt

You can never go wrong with denim shorts and a striped shirt, especially when both pieces are easy to wear and mix into your casual summer style. The Denim Emmett Shorts from Madewell hit just the right length for petites, and I styled them with a blue striped oversized shirt for that relaxed, beachy feel.

A Braided Leather Belt adds texture and shape, while simple crossover sandals bring a clean finish.

Sips & Bites to Celebrate Casual Summer Style

Blueberry Mint Cooler

This week’s sip is bursting with seasonal flavor. The Blueberry Mint Cooler combines homemade blueberry syrup, fresh mint, and a splash of lemon juice, topped with sparkling water for a fizzy, refreshing finish. It’s light, herbaceous, and the perfect patio drink for a sunny afternoon. Add vodka if you’re in the mood for a little extra kick, or keep it alcohol-free for a mocktail that’s just as delicious.

Grilled Corn & Zucchini Flatbread

For the main bite, we’re leaning into the best of summer produce. This Grilled Corn & Zucchini Flatbread is layered with creamy herbed goat cheese and finished with a sprinkle of chili flakes for a bit of heat. The smoky vegetables and tangy cheese pair beautifully with the crisp flatbread base—it’s the kind of recipe that feels special but comes together effortlessly. Perfect for casual entertaining or an elevated night in.

Grilled Corn & Zucchini Flatbread

Grilled Corn & Zucchini Flatbread is layered with creamy herbed goat cheese and finished with a sprinkle of chili flakes for a bit of heat.

Ingredients:

  • 1 Prepared Flatbread Dough
  • 1 Zucchini sliced
  • 1 cup of Corn can use frozen or fresh
  • 1 package Garlic & Herb Boursin Cheese or Herbed Goat Cheese
  • Chili flakes
  • Optional Salad to Top:
  • Arugula
  • Shallot sliced
  • Cherry tomatoes halved
  • 3 tbsp. Red wine vinegar
  • 2-3 tbsp. Olive oil
  • Salt and pepper to taste

Instructions:

  • Preheat oven to 425º F.
  • In a cast-iron skillet, heat a drizzle of olive oil over medium-high heat. Add the corn and sauté, mostly undisturbed, until the corn develops brown spots and begins to char. Transfer the corn out of the pan and add the zucchini slices with another drizzle of olive oil. Let zucchini cook undisturbed until golden, then flip slices to brown on the other side. Then remove from the heat.
  • Meanwhile, spread the flatbread dough on a parchment-lined baking sheet and par-bake the flatbread for about 5 minutes, just until the dough puffs a little and gets a slightly golden color in spots.
  • Brush the flatbread with olive oil and evenly spread the zucchini slices and corn, then top with pieces of Boursin cheese. Sprinkle with red pepper flakes if desired. Bake the flatbread for about 5-8 more minutes until the crust is golden and the cheese is melted.
  • Meanwhile, make the optional arugula salad. In a jar, make the vinaigrette by shaking the vinegar and olive oil until emulsified. Add salt and pepper to taste.
  • Toss the handful of arugula, cherry tomato halves, and minced shallot with the vinaigrette and set aside.
  • When the flatbread comes out of the oven, slice it into 4-6 pieces and top it with the dressed arugula salad.

    Kelly and Beth,

You two look so polished yet relaxed! I really like your slide sandals too (especially eyeing Kelly’s).
Fridays with the cocktails and recipes are the best! Also, the portrait of Oscar is very nice.
Have a great weekend! Treating myself to a mani/pedi on Saturday and plan to cook ribs and sides for an early Father’s Day meal (we’ll be in Detroit for a wedding) ~

    Happy Friday 🙂
