Blueberry Mint Cooler
This week’s sip is bursting with seasonal flavor. The Blueberry Mint Cooler combines homemade blueberry syrup, fresh mint, and a splash of lemon juice, topped with sparkling water for a fizzy, refreshing finish. It’s light, herbaceous, and the perfect patio drink for a sunny afternoon. Add vodka if you’re in the mood for a little extra kick, or keep it alcohol-free for a mocktail that’s just as delicious.


Blueberry Mint Cooler
Ingredients:
- 1 cup blueberries
- 1/2 cup mint leaves
- 2 tablespoons lime juice
- Ice
- 2 teaspoons maple syrup
- 2 ounces vodka
- 1 cup seltzer
- mint sprigs for garnish
Instructions:
- Place blueberries, mint, and lime juice in a cocktail shaker and muddle. Add ice, maple syrup, and vodka. Shake vigorously to blend.
- Strain into highball glasses with ice. Top with seltzer water. Garnish with a mint sprig.

Grilled Corn & Zucchini Flatbread
For the main bite, we’re leaning into the best of summer produce. This Grilled Corn & Zucchini Flatbread is layered with creamy herbed goat cheese and finished with a sprinkle of chili flakes for a bit of heat. The smoky vegetables and tangy cheese pair beautifully with the crisp flatbread base—it’s the kind of recipe that feels special but comes together effortlessly. Perfect for casual entertaining or an elevated night in.


Grilled Corn & Zucchini Flatbread
Ingredients:
- 1 Prepared Flatbread Dough
- 1 Zucchini sliced
- 1 cup of Corn can use frozen or fresh
- 1 package Garlic & Herb Boursin Cheese or Herbed Goat Cheese
- Chili flakes
- Optional Salad to Top:
- Arugula
- Shallot sliced
- Cherry tomatoes halved
- 3 tbsp. Red wine vinegar
- 2-3 tbsp. Olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 425º F.
- In a cast-iron skillet, heat a drizzle of olive oil over medium-high heat. Add the corn and sauté, mostly undisturbed, until the corn develops brown spots and begins to char. Transfer the corn out of the pan and add the zucchini slices with another drizzle of olive oil. Let zucchini cook undisturbed until golden, then flip slices to brown on the other side. Then remove from the heat.
- Meanwhile, spread the flatbread dough on a parchment-lined baking sheet and par-bake the flatbread for about 5 minutes, just until the dough puffs a little and gets a slightly golden color in spots.
- Brush the flatbread with olive oil and evenly spread the zucchini slices and corn, then top with pieces of Boursin cheese. Sprinkle with red pepper flakes if desired. Bake the flatbread for about 5-8 more minutes until the crust is golden and the cheese is melted.
- Meanwhile, make the optional arugula salad. In a jar, make the vinaigrette by shaking the vinegar and olive oil until emulsified. Add salt and pepper to taste.
- Toss the handful of arugula, cherry tomato halves, and minced shallot with the vinaigrette and set aside.
- When the flatbread comes out of the oven, slice it into 4-6 pieces and top it with the dressed arugula salad.
