hello, friday, it’s good to see you again! let the weekend begin. we’re kicking it off with a Southwest Chicken Salad and Malibu Sunrise. if you like a light meal and refreshing cocktail, then this post is for you! plus, my best buddy decided to show up for his weekly gig. it’s an indoor photoshoot as we’ve been plagued with rain for over a week. but there’s hope! the forecast is blue skies and sunshine for the next week or so. hooray!
what to wear on a rainy day? i took advantage of the cool indoor temps and hauled out my jean jacket. it’s one of my all-time favorite jackets. this particular jacket is at least fifteen years old (maybe twenty) and is light wash denim but i have a dark wash, white, and even a gingham denim jacket on hand. i guess you could say i’m cuckoo for jean jackets. they’ve been a hard-working wardrobe staple for years. if you missed this post on how to wear jean jackets now’s the time to catch up on your reading.
don’t you just love a light meal on a hot summer day? salads are always a good choice in my book. add some veggies and protein, and you’ve concocted an entire meal! what could be easier? Chick-Fil-A offers a delicious southwest chicken salad on their menu that i thought i could mimic at home. and i think i did a pretty good job. i even added a few extra ingredients that gave it a twist. a summertime cocktail should be light and refreshing. last week i shared a mojito. this week, the Caribbean is calling my name, so rum is the name of the game with a Malibu Sunrise. maraschino cherries add that little extra something.
Place ice cubes in glass.
Pour in pineapple juice and rum.
Tip glass and pour in grenadine for a layered look.
Garnish with maraschino cherries.
if you like a comfy pair of lightweight shorts, may i suggest these drawstring shorts from J.Crew Factory? they are so soft they could double as pajamas. perfect for the dog days of summer that have arrived. add a pop of color with a v-neck tee. this one is sleeveless, but there’s also a short sleeve version available. i’m going old school today, so i grabbed my jean jacket (similar here) and a statement necklace (similar here) from Banana Republic to add a little prep to my step. and speaking of shoes, these cap-toe espadrilles from Tory Burch (affordable option here) go with so many summer outfits and are a nice change of pace from sandals or sneakers.
shorts | tee | jacket | shoes (affordable option here) | necklace (similar here)
In a mixing bowl, whisk together two tablespoons of olive oil with lime juice, chipotle powder, cumin, dried oregano, garlic powder, onion powder, and kosher salt.
Combine the marinade and cubed chicken tenders in a shallow dish or plastic bag. Marinate the chicken for 2-6 hours in the fridge.
When the chicken is done marinating, heat one tablespoon of olive oil in a large skillet over medium-high heat. Then sear the chicken for 4-5 minutes on each side until they're golden brown.
Let the cooked chicken rest for a couple of minutes.
In a large salad bowl, layers the chopped lettuce with beans, corn, tomatoes, red peppers, red onion, cheese, and chicken — drizzle salad dressing over the top. I used Cilantro Dressing from Trader Joe's.
oscar, ollie and i wish you a lovely weekend!

I bought same shorts at beginning of summer for our trip to Charleston SC, and I LOVE them! They are perfect for our hot weather in Illinois, too!
are these shorts not the cutest? but the comfort level is amazing. perfect for your trip to Charleston!
The black, off-one-shoulder top is way too cute. I’ve often wondered about wearing a blouse like that; doesn’t one shoulder get cold? Terrific look, but…
this outfit is firmly rooted in summer when the temps are hot and hotter.
Shorts say they have 3” inseam – look good on you but seem awfully short for most “mature” women. Can you show some that are longer?
thanks for the suggestion! i try to show a variety of lengths. i hope you didn’t miss these recent posts:
That cocktail looks super good
The chicken salad also very delicious
Thank you for making our Friday more pleasant.!!!
i was pleased with how the salad turned out. happy Friday!
Cute outfit! Scrumptious looking salad and drinks too. And of course, the adorable pets. Have a great weekend!
thanks, deanna! you too!
I always enjoy style and advice.
Especially Fridays when Oscar and Ollie join you. They are both so photogenic.
Ollie looks like he is so “in charge.”

Hi Beth, definitely going to try the southwest chicken salad. Wishing you a lovely weekend xx
thanks julie! it’s always good to hear from you.
Very interested in making up the sunshine alcoholic drink featured today, cat looks as though it had a few, ha ha.
Thank you very much for all your fashion inspirations, even if I cannot stretch to the price tags on some items, even the cheapest, I still manage to put together the ideas from my own wardrobe range that has been there all along screaming to get out,ha ha.
i’m so happy your are finding inspiration and recreating from your own wardrobe. there’s nothing better than
shopping your closet!
I am sorry but what is up with your hair?
seriously? what is up with my hair? not, that recipe looks delicious or the cocktail looks refreshing or even that ollie stopped by? i love hearing from my readers, but i will leave a gentle reminder that when you visit my blog or one of my social channels, you are visiting my home. i’m happy to answer questions, but would you ask this question if we were seated face to face? my hair is pushed back today, i wear it like this from time to time. there’s lots of natural wave to my hair, as is evident in today’s blog post. so that, in a nutshell, is what is up with my hair.
Thank you for that idea for the salad and all the color on your fingers, too! I might venture out and put the bright green color that I have on my toes, on my fingers. That might be fun! Love how Ollie is like your kitty owl…watching over and Oscar is your protective darling! Hang in there with the dog days <3
the blue polish is a whole lot of fun. i’ve received so many compliments!
Hello Beth… That recipe looks fabulous and I plan on trying it very soon. As always, you are beautiful and so elegant. Thank you for being such a positive inspiration🌺
i think you will enjoy this salad. it’s so easy to make and delicious. perfect for a hot summer day.
HI, Beth. This salad was really good! I made a few minor changes: fresh corn and lime vinaigrette. I layered mine as suggested, and it was really pretty. Definitely a keeper! Thanks, Maeve
