Happy Friday, gang! There’s a certain kind of Friday that calls for something special — not complicated, not fussy, just special. The kind of evening where the light is golden, the week is finally behind you, and all you want is a beautiful drink and a dinner that comes together without a fuss. That’s exactly what we have for you this week, friends.

We’re pouring a classic Aperol Spritz — that iconic Italian aperitivo that practically invented the concept of happy hour — and pulling together a Sheet Pan Lemon Herb Chicken that is as gorgeous as it is effortless. Boneless chicken thighs, fresh herbs, baby potatoes, sweet onions, asparagus, and bright slices of lemon, all roasted together in one pan. Spring entertaining, simplified.

🍊 Aperol Spritz

If you’ve never had an Aperol Spritz, first of all — welcome, and you’re going to love it. This bittersweet, bubbly Italian cocktail has been the unofficial drink of spring and summer for decades, and for good reason. It’s refreshing, low-alcohol, and absolutely stunning in a glass. The classic 3-2-1 ratio is all you need: three parts Prosecco, two parts Aperol, one part soda water. Simple, perfect, and endlessly sippable.

Why do you add the Prosecco before the Aperol?

Adding the Prosecco first helps preserve the bubbles — stirring Aperol into bubbly wine keeps the carbonation more intact than the other way around.

What does Aperol taste like?

Aperol is pleasantly bittersweet with notes of orange, rhubarb, and herbs. It’s lighter and less bitter than Campari, which makes it very approachable and crowd-friendly.

Can I make a big batch for a group?

Absolutely! Scale up the 3-2-1 ratio and combine the Aperol and soda in a pitcher ahead of time — then pour over ice and top with Prosecco per glass to keep the bubbles fresh.

What’s the green olive about?

The olive is a traditional Italian touch that adds a savory, briny contrast to the sweet-bitter cocktail. It sounds unexpected, but trust us — it works beautifully.

Can I use Champagne instead of Prosecco?

You can, though Prosecco is traditional and its slight sweetness balances Aperol perfectly. Champagne will give you a drier, crisper result.

The classic Italian aperitivo — bittersweet, bubbly, and endlessly sippable. Three ingredients, one perfect ratio, and spring happy hour in a glass.
Makes: 2 Cocktails
Prep Time 5 minutes
Total Time 5 minutes

Ingredients:  

  • 6 oz Prosecco
  • 4 oz Aperol
  • 2 oz club soda
  • Ice
  • 2 orange slices for garnish
  • 2 green olives for garnish

Instructions: 

  • Fill two large wine glasses with ice.
  • Pour 3 oz Prosecco into each glass.
  • Add 2 oz Aperol to each glass.
  • Top each with 1 oz club soda and stir gently to combine.
  • Garnish with an orange slice and a green olive. Serve immediately.

🍋 Sheet Pan Lemon Herb Chicken

This is the kind of recipe that makes you feel like a genius. One pan, minimal prep, and a dinner that looks like it belongs in a spring magazine spread. Boneless chicken thighs are the hero here — they stay juicy and flavorful even at high heat — and the combination of fresh herbs, bright lemon, sweet onions, tender potatoes, and crisp asparagus is just spring on a sheet pan.

The secret is giving the potatoes and onions a head start in the oven before adding the chicken and asparagus, so everything finishes at exactly the right time. Layered lemon slices roast right alongside everything else, turning jammy and fragrant as they cook. It’s a beautiful, effortless dinner that pairs perfectly with that Aperol Spritz in hand.

Can I use bone-in chicken thighs instead?

Yes! Bone-in thighs will need an additional 10–15 minutes of cooking time. Check for an internal temp of 165°F and use a meat thermometer to be sure.

Can I prep this ahead of time?

You can marinate the chicken and chop the vegetables up to 24 hours ahead. Store everything separately in the fridge, then assemble and roast when you’re ready.

Why do the potatoes go in first?

Potatoes take longer to cook than asparagus and chicken thighs, so giving them a 20-minute head start ensures everything finishes at the same time and nothing gets over- or undercooked.

What herbs work best?

A mix of rosemary, thyme, oregano, and parsley gives you the best of all worlds — woodsy, bright, and fresh. If you only have one or two on hand, that works too. Fresh herbs make a noticeable difference here, so we’d encourage using them if you can.

What should I serve alongside this?

Honestly, this is a full meal on its own — protein, veggies, and starch all in one pan. A simple green salad or some crusty bread to soak up the pan juices is all you really need.

Can the asparagus be swapped out?

Definitely, Broccolini, green beans, or zucchini would all be lovely here and follow a similar roasting time.

Sheet Pan Lemon Herb Chicken

One pan, minimal prep, and a dinner that looks like it belongs in a spring magazine spread. Juicy chicken thighs roasted with fresh herbs, baby potatoes, sweet onions, asparagus, and bright lemon — everything finishes together at exactly the right time.
Makes: 4 Servings
Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes

Ingredients:  

  • 4 boneless skinless chicken thighs
  • 1 lb baby potatoes halved
  • 1 large sweet onion cut into wedges
  • 1 bunch of asparagus woody ends trimmed
  • 1 lemon thinly sliced, plus juice of 1 more lemon
  • 3 tbsp olive oil divided
  • 3 cloves garlic minced
  • 2 tbsp fresh mixed herbs chopped (rosemary, thyme, oregano, and parsley)
  • 1 tsp kosher salt divided
  • ½ tsp black pepper divided
  • Flaky sea salt for finishing

Instructions: 

  • Preheat oven to 425°F. Line a large sheet pan with parchment paper or foil.
  • In a large bowl, toss the halved potatoes and sweet onion wedges with 1½ tbsp olive oil, half the garlic, half the herbs, ½ tsp salt, and ¼ tsp pepper. Spread in a single layer on the prepared sheet pan.
  • Roast for 20 minutes, until potatoes are beginning to turn golden.
  • While the potatoes roast, pat the chicken thighs dry and coat with the remaining olive oil, garlic, herbs, salt, pepper, and the juice of one lemon.
  • Push the potatoes and onions to the sides of the pan. Nestle the chicken thighs in the center and tuck the lemon slices and asparagus around everything.
  • Return to the oven and roast for 20–25 minutes, until the chicken is cooked through (internal temp of 165°F) and the asparagus is tender with slightly caramelized tips.
  • Finish with a squeeze of fresh lemon and a pinch of flaky sea salt. Serve straight from the pan.

🐾 Oscar & Ollie

You didn’t think we’d leave out the real stars of Fridays with Oscar, did you?

Ollie made her presence known long before the Aperol was poured — perched regally on the dining room table as if overseeing the entire shoot. She surveyed the spread with the kind of dignified authority only a Maine Coon can pull off, and then, mid-session, gifted us with the most theatrical yawn we’ve ever seen. She was not impressed. She is, however, very handsome.
