happy friday, gang! honestly, didn’t i just say that about a second ago? where is this week/month going? not that we mind February to become a distant memory since most of the country was hit hard with a wintry blast of snow, ice, and freezing temps. but friday is here once again, and do i have a fun post for you today! many of you know my daughter-in-law kelly launched a blog that whips up delicious recipes. it’s called Djalali Cooks. if you haven’t gone over to say hello, i hope you will today. the two of us are collaborating on a blog post that’s dishing up not one but two yummy pizzas. both are easy to make, and if i do say so myself – delicious. don’t worry; oscar still makes a cameo appearance. ollie too! so come on in enjoy photos of kelly’s gorgeous kitchen ‘cuz today it’s all about pizza with Djalali Cooks and a special treat National Margarita Day.
when my kiddos were growing up, friday was always special as we would load up the car, head to our local pizza joint then mosey on over to our local video store. every week like clockwork, we kicked off the weekend with pizza and a movie. it was great fun to watch the boys scour the video shelves for the latest and greatest release. sometimes, it took quite a bit of deliberation on their part to make the final decision. is there ever a wrong choice with a movie? good, bad or in between it’s a rare day when i don’t watch a movie from beginning to end. as you can imagine, there was always a vigorous debate when we arrived home as to which movie lined up in the queue first. memories of mine, mine, mine come to mind… it warms my heart to watch kelly and aj continue that tradition, and now she shares pizza and a movie every week on Djalali Cooks. kelly, what movie are we watching this week?
pizza with Djalali Cooks and national margarita day
one of my all-time favorite pizzas is Mediterranean pizza. it’s a healthy choice and so easy to make, especially with the help of Trader Joe’s. the pizza dough is pre-made! easy peasy. then i purchased organic chicken breasts, Bella mushrooms, spinach, kalamata olives, artichoke hearts, feta cheese, and mozzarella cheese. honestly, you can mix and match any and all of your favorite ingredients to put this pizza together. after the pizza bakes in the oven, top it off with chopped parsley. can you say delicious?! stop by Djalali Cooks for kelly’s pizza recipe.
bake pizza crust in a 450-degree oven for 8-10 minutes
drizzle with olive oil
assemble ingredients on top of pizza crust
bake pizza for 8-10 minutes or until cheese is brown
chop parsley and sprinkle over baked pizza

yes, it’s National Margarita Day! if there is one cocktail i like above all else, it has to be a margarita. through the years on the blog, we’ve whipped up our fair share of frozen or on the rocks margaritas. all i can say is use fresh ingredients, a good tequila, Cointreau, and you are good to go! my favorite just might be a jalapeno margarita. as far as glassware goes, if i make frozen margaritas, i serve them in the jumbo margarita glass. on the rocks go into an old-fashioned glass. either way, you can whip up a big batch of margaritas and have them at the ready in a pitcher.
For the salted rim, take a lime wedge and coat the rim of a rocks glass. Dip in margarita salt, rotating until coated.
Combine all ingredients (except for the ice) in a cocktail shaker. Stir until honey fully dissolves into the cocktail.
Add a cup of ice and shake vigorously for 10 seconds. Pour straight into the old fashioned glass with the (now crushed) ice from the shaker. Garnish with a lime wedge. (for less heat, don't shake the jalapeño into the cocktail, only add as garnish and stir).
guess who decided to join us for fridays with oscar? yes, ollie is making a cameo appearance today. notice how none of us are looking at the camera at the same time. gotta love working with animals! or maybe it’s me?
everyone always thinks ollie looks mad. at least that’s what my readers think. but if you are looking for a good-natured, chill, and friendly cat that loves to hang out with its family, a Maine Coon cat is for you.
today’s ootd is casual and fun! it all starts with leopard jeans (old, similar here,here, and here) and a bobble stitch sweater from Talbots last seen here. a denim shirt and platform loafers (old, similar here, here, and here) complete the look. don’t you just love friday and the casual ease that comes with it?

Excellent pizza, Kelly! I have a pizza dough recipe that makes two, so I just freeze one for just such an occasion! I tried your method of prebaking, and then olive oil prior to finishing – wow. I couldn’t tell the difference between yours and restaurant! My husband loved it. Thanks for sharing, Kelly!
