Preheat the oven to 450 degrees F.
Zest the lemon into a large bowl. Add 1 tablespoon lemon juice (reserve the lemon’s remaining juice for the shrimp and serving), oil, garlic, salt, pepper, and oregano. Whisk to combine.
Add the artichokes, asparagus, tomatoes, and onion. Toss by hand to coat.
Transfer the mixture to a large rimmed baking sheet and spread it into an even layer. Place in the oven and bake until the tomatoes begin to soften and release their juices, about 12 minutes.
While the vegetables are cooking, in the same bowl you used for the vegetables, stir together 1 tablespoon lemon juice, oil, oregano, red pepper, garlic, and salt. Add the shrimp and toss to coat.
Remove the baking sheet from the oven and add the shrimp. With a large spatula, stir to combine the shrimp and vegetables together. Spread back into an even layer.
Return to the oven and continue baking until the shrimp are pink, opaque, and cooked through, 6 to 10 minutes more, depending upon the size of your shrimp. Do not overcook! As soon as the shrimp look opaque and pink, they are cooked.
Remove the pan from the oven. Sprinkle with the feta and parsley, add the olives and squeeze the remaining 1 to 2 tablespoons lemon juice over the top. Season with a pinch of additional salt and black pepper to taste. Serve warm. This dish pairs nicely with rice or baguette slices.
Hi – I was so glad to see your comment about age and shorts. I’m 59 and wear shorts every day that it is hot – and it has been HOT here in Kansas. I can’t see a day when I’d stop wearing them. I appreciate you making us all feel it is perfectly fine. Thanks!
keep on rocking those shorts! i always say clothes have sizes not ages. thanks for stopping by.
Hello Beth and Oscar. I like your look today but the shorts are too short for me. I would like to see bermudas. The shrimp recipe looks really great. I” try it. Kelly looked adorable this week on her post. How tall is she? Take care.
wasn’t kelly’s outfit adorable?! so happy she’s here dishing up style and recipes!
Hi Beth, why not wear shorts at 63 I say go for it. Monday and Tuesday this week we had a heatwave we reached 110f at one point, most English homes don’t have air con so we had to keep all the curtains and blinds drawn to help keep the heat out, I’ve never known temps that high in my 62 years.
You know I love a Negroni considering I don’t like Campari, sweet vermouth but I do like gin and all three together for me work. Wishing you Oscar and Ollie a lovely weekend xx
it’s been a hot, hot summer all around the world! stay cool and enjoy that Negroni!
Hello to Oscar! I live for Fridays to see my buddy Oscar. As u know my elderly Rilee passed in March. Seeing Oscar helps mend my heart. Rilee, even tho a Boxer, Shepherd, Pittie mix, was the same coloring as Oscar. You look great today Beth! At 71 I love shorts too even in Wisconsin. You & Oscar are sporting the same colors – black n tan! Love!
Enjoy your weekend!
Wisconsin can dish up some pretty hot temps during the summer months. Keep mending your broken heart. The saddest day is the day we say goodbye to our faithful friends.
I love khaki and black together, it was my regular look for work-outfits. I really loved the navy bermudas and satin blouse you modeled the other day.
I found shorts that fit me well this summer and am enjoying wearing hem.
you just can’t beat that classic combo! so glad to hear you’re on team shorts!
Love that Dolman, on. you, rock that outfit very well.
The pendant is very pretty also.
I am going to try to make the cocktail, this weekend
this is one of my favorite cocktails! cheers!
Cold and wintry in my part of the world. Your outfit inspires a black cashmere sweater and stone chino outfit for me this weekend.. This shrimp recipe is mouth watering! I’m going to save it for our summer Christmas at the beach house. Enjoy your summer while it lasts.
even though it’s been hot and hotter you just can’t beat summer if blue skies and sunshine prevail.
Hi, Beth, you look just great. I don’t always jot a note these days to you or to Kelly, but I always watch for both of you. XOXO The shrimp recipe sounds yummy. Must try–between you and Kelly I’ve had some excellent ideas for new recipes to try. Thanks! Have a wonderful weekend–we’re having scorchers here in NC, too. Stay cool.
Loving the entire outfit, quite beautiful, as well as, your hairstyle.
it’s always a good day when i hear from you! doesn’t Kelly have the best recipes?! stay cool, girlfriend, this summer’s been a scorcher.
Nice look (of course having handsome Oscar in the photo doesn’t hurt!) I’m glad you’re covering BR: I think they have really upped their game recently. Nice couture and jewelry. Stay cool! Even here on the shore line of Westport CT it’s in the mid 90’s and awfully humid.
i have been singing the praises of Banana Republic for about two years. but they keep getting better and better with each collection.
Hello Beth- first time poster here. Always enjoy your content. I have made the Mediterranean shrimp recipe many times- just last night! It is always yummy and with aa little prep, easy as well! You have a wonderful fashion sense. Cheers!
welcome! i’m so happy you stopped to say hello!
Your comment made me laugh! My mother also wore shorts until the day she died at 81. She didn’t always think she looked great in them anymore but was a big believer in comfort. She didn’t have center air in her home. As for me, at 61 I prefer shirts over shorts, we absolutely wear shorts during my morning walks here in steamy Alabama. You look great! And I cannot wait to try that shrimp recipe as I’m beginning a low carb diet. Again! Looks yummy!
i know you will love the shrimp recipe! so easy to throw together and delicious to boot.
That outfit looks fresh and cool. I like the tailored look of the shorts. It’s so hot this Summer – here in NJ and everywhere. I’m 68 and wear shorts when weather dictates. I think every woman, regardless of age or figure type, can wear shorts and look appropriate and nice. If the fabric has some body or crispness and they fit well, it works. I don’t expect my legs to look like I’m 30 or 40. They look fine for my age. No one stares ar one body part anyway – if the outfit is nice, you look nice!
you are so right! thanks for sharing.
