As so many of these recipes involve eggs, I've also linked a tutorial on how to make eggs I wrote a few years ago. Whether you're making scrambled eggs, poached eggs, or want to serve up an omelette for 2, I've got you covered today.

I thought we’d have a little week-end clean out the fridge inspiration. There are many ways to use up leftovers, like yesterday’s Beer Brat Pizza, a breakfast burrito is another great way to throw a bunch of random leftovers together. Mix up those leftovers with eggs and cheese, wrap it in a warm tortilla, it’s as easy as that!
A Breakfast Hash is an easy way to serve up a complete breakfast for two or four in one pan. Instead of bacon, we are using pancetta; which, in my opinion, is an easier way to add bacon flavor to this hash, since often you can find the Pancetta already diced. The only real prep is dicing the potatoes. We will brown the pancetta, and then brown the potatoes right in the pan drippings. Easy peasy. Let’s get to the recipe!
Mondays seem to be carrying a theme these past couple weeks…unintentional, I assure you, but just as well. We can’t seem to quit the breakfast sandwich! This sandwich popped into mind because I thought many of us might have leftover Christmas ham. But even if not, this one is easy to whip up – especially if you have a tube of biscuits on hand.
