Red, White, and Berry Sangria
Ingredients:
- 1 bottle 750 ml sparkling white wine
- 2-½ cups white cranberry juice
- ⅔ cup light or coconut rum
- ½ cup fresh blueberries
- ½ cup chopped fresh strawberries
- Ice cubes
Instructions:
- In a large pitcher, mix wine, juice, and rum; add fruit. Refrigerate at least 2 hours; serve over ice.

It’s refreshing, savory-sweet, and comes together in minutes—no cooking required, which is always a win on a hot day. The combination of juicy watermelon, crisp cucumber, and salty feta is perfectly balanced, while a touch of mint and lime brightens every bite. It’s the kind of dish that disappears quickly, so I always make a little extra just in case!
Watermelon Cucumber Salad
Ingredients:
- 3 cups Seedless Watermelon cubed
- 1 English Cucumber sliced
- 1 Serrano Chile or Jalepeño seeded (optional) and sliced
- 3 tbsp. Thinly Sliced Mint Leaves or small mint leaves
- 2 tbsp. Lime Juice plus more to taste
- 3 tbsp. Olive Oil
- Kosher Salt and Black Pepper to taste
- ⅓ cup Feta crumbled
Instructions:
- In a small jar, combine the olive oil, lime juice, kosher salt, and black pepper. Affix the lid and vigorously shake to emulsify. Set aside.
- In a large bowl, combine the watermelon, cucumber, chile, and mint leaves. Pour the dressing over the salad and toss to combine. Top the salad with the feta and give another gentle stir. Transfer to a serving platter if desired.
