- 3 cups Seedless Watermelon cubed
- 1 English Cucumber sliced
- 1 Serrano Chile or Jalepeño seeded (optional) and sliced
- 3 tbsp. Thinly Sliced Mint Leaves or small mint leaves
- 2 tbsp. Lime Juice plus more to taste
- 3 tbsp. Olive Oil
- Kosher Salt and Black Pepper to taste
- ⅓ cup Feta crumbled
In a small jar, combine the olive oil, lime juice, kosher salt, and black pepper. Affix the lid and vigorously shake to emulsify. Set aside.
In a large bowl, combine the watermelon, cucumber, chile, and mint leaves. Pour the dressing over the salad and toss to combine. Top the salad with the feta and give another gentle stir. Transfer to a serving platter if desired.
