And just like that, it’s Friday! This week whizzed by. I hope you caught Sunday’s post where we kicked off Holiday Outfits. We’ll have more holiday inspiration this Sunday, so stay tuned. Yesterday, I kicked off a month-long Wedding Series and shared one option for my MOG dress. I’ll share three more posts by the end of the month, as well as hair and makeup. It’s been so much fun shopping for the wedding that’s only weeks away. NYE, to be exact! And last but not least, we’ve released several gift guides to make your holiday shopping a bit easier. Today, we are taking things nice and easy with Cozy Casual Fall Outfits.
Are you ready to kick off the weekend? Let’s do it! Kelly has a yummy French Dip sandwich perfect for a chilly day. And we’re whipping up an old favorite with a new twist - a Coffee Negroni. The only twist to this cocktail is the addition of a coffee ice cube. Try it! You’ll like it! Just remember to make the coffee ice cubes ahead of time.

I’m keeping my ootd simple today with a cozy sweater from Ann Taylor and velveteen jeans from Talbots. I added a pair of metallic kitten heels for a little wow factor. But honestly, nothing beats the simple combo of sweater and jeans this time of year or an oversized sweater and faux leather legging.

While Beth added a little glam to her ootd today, I am definitely all casual! Cooler fall temperatures are fun for layering and denim-on-denim is an easy way to go. I may have been watching a few too many neo-westerns lately, but I just felt the need to go with a Western-inspired outfit today!

Agolde Jeans are the base of my outfit, then I have a very comfortable Split-Neck Long Sleeve Tee which is a great layering top from Madewell. My favorite boots from last year, the Laguna Chelsea Boot from Sam Edelman are a comfy choice. But I can’t forget the third layer, a Denim Western Shirt with pearl snaps completes the look.
As Beth mentioned above, this Coffee Negroni has a simple twist, serving it over a coffee ice cube. What a way to wake up your Negroni! This cocktail was so flavorful and smooth, perfect for a fall day too. You will want to make your cube in a large cube tray, be it a sphere or cube shape; the large size will keep it from melting too quickly.
Makes 2 Cocktails
3 oz. Dry Gin
2 oz. Vermouth
3 oz. Campari
Large Coffee Ice Cubes
Orange Peel, garnish
In a mixing glass, combine one large coffee ice cube with the remaining ingredients (except garnish) and stir until very well chilled. Strain into rocks glasses, each with one large coffee ice cube. Garnish with the orange peel.
The French Dip is a wonderful fall sandwich! You have the delicious aroma of slow-cooked beef filling your kitchen for hours. With the big payoff of a beautiful beef sandwich and provolone cheese between a crusty, soft French roll.
3-4 lb. Chuck Roast
Kosher Salt, Pepper, Granulated Garlic to coat roast
2 tbsp. Olive Oil
1 Onion, sliced
1.5 cups Beef Broth
2 tbsp. Worcestershire Sauce
Hoagie Rolls
2 slices Provolone per Sandwich
Generously coat entire roast with salt, pepper and garlic, set aside.
In a separate pot, sear Roast on each side until it develops a nice, browned crust, about 8 minutes each side. Transfer roast to a slow cooker.
Add onions, broth, and Worcestershire Sauce.
Place lid, switch slow cooker to high and set the timer for 3 hours.
Preheat oven to 375 degrees.
Transfer chuck roast to a sheet tray.
On a separate sheet tray, open hoagie rolls and lay two slices of Provolone over the entire hoagie surface. Bake until cheese is melted, about 6-8 minutes.
Shred the chuck roast with two forks.
Pile the shredded roast on one side of each hoagie roll, fold closed and slice in half.
Serve with a small bowl of the au jus straight from the slow cooker.
