We have done Lemon Poppy Seed Scones, and while those are great, I have to say I love to have dried fruit in my scones. The light and fluffy, biscuity texture of the scone is wonderful with the chewy flecks of dried fruit. Hello and welcome! For a sweet treat today, I have Baked Apple Cider Donuts. Fall’s favorite hand-held confection, Baked Apple Cider Donuts are cakey and soft. They are best enjoyed warm, preferably with a hot cup of coffee on a cool, crisp morning. I did buy a donut pan specifically for this recipe, but you can make these in muffin tins. Even though the muffin tin version is missing the characteristic donut hole, they come out like muffin tops. Let’s get right to it!

Today we are making a Neapolitan Semolina Cake (Migliaccio di Semolino), which is like a cross between cake and flan; its texture is dense and creamy, yet it’s light and refreshing. The flavor is only lightly sweet, perfumed with citrus, vanilla and spice. This cake’s base is a semolina porridge, mixed with ricotta and eggs. I found this recipe in the latest issue of Cook’s Illustrated and it sounded so interesting, I thought it would be fun to try. So let’s do it!

I suppose the finale of this year’s Great British Bake Off finds me missing my weekly visits to the Bake Off tent. While I revisit past GBBO seasons on Netflix, I will also revisit holiday baking. To ease myself into it, I am starting with one of my favorites: The French dessert, Clafoutis. Clafoutis is a custardy cake-like dessert that is only lightly sweet and usually features fruit like dark sweet cherries. In keeping with the season, today we are making a Cranberry Clafoutis.
