Asparagus, Brie and Prosciutto Puff Pastry

Makes 4 Puff Pastry Bundles

1 Sheet Frozen Puff Pastry Dough, thawed but still very cold

2 tbsp. Dijon Mustard

16 Spears Asparagus, ends trimmed

4 Slices Prosciutto

4 slices Brie Cheese

1 Beaten Egg

Everything But The Bagel Seasoning, or Toasted Sesame Seeds


Instructions

Preheat oven to 400 degrees F. Line a sheet tray with parchment.

On a lightly floured surface roll out the puff pastry dough to flatten creases. Use a knife or roller cutter to slice the puff pastry dough into four equal rectangles.

Wrap 4 spears of asparagus with one slice of prosciutto. Repeat with the remaining 12 asparagus spears and three pieces of prosciutto. Set aside.

Dollop and spread about ½ tablespoon of Dijon mustard diagonally down the center of each puff pastry rectangle.

Place the prosciutto-wrapped asparagus bundles in the center of each puff pastry rectangle, on top of the Dijon mustard.

Place one slice of brie on top of each prosciutto-wrapped asparagus bundle.

Take one side of the puff pastry and fold it over the asparagus bundle. Brush the top of that corner with a little egg wash. Fold the opposite side of the puff pastry over, gently pressing to adhere the pastry.

Place the puff pastry bundles on the parchment-lined sheet tray.

Brush the tops of the puff pastry bundles with egg wash and sprinkle with Everything But The Bagel seasoning or toasted sesame seeds.

Bake the puff pastry bundles for 20-25 minutes, until the pastry is puffed and golden.
