Turkey Cauliflower Nachos – Thanksgiving Leftovers

Happy Sunday! I hope you had a wonderful Thanksgiving holiday. If you’re like me, after a few days of picking at the Turkey Day leftovers, I am ready to move on from the Thanksgiving food. Especially the heaviness of it. So today, I have a really easy, light way to transform the turkey leftovers into a delicious light meal or lunch for two. Turkey Cauliflower Nachos! Let’s get right to it.

Turkey Cauliflower Nachos – Thanksgiving Leftovers

Turkey Cauliflower Nachos

So instead of using tortilla chips, we are marinating the sliced cauliflower in a spice blend of cumin, chile powder, onion powder, and a little kosher salt. Preheat the oven to 400ยบ F. Lightly coat a sheet tray with a little grapeseed or vegetable oil and set it aside. Whisk together the seasonings with 3 tablespoons of grapeseed or vegetable oil and set aside.

Slice the cauliflower florets about ยผ” thick. The flat surface areas of the florets will get nice and brown with a little crisping. 

Toss the sliced cauliflower in the seasoning and oil to coat, then spread the florets out in a single layer on the oiled sheet pan. Roast the cauliflower for 20 minutes or so, until it’s tender and beginning to brown.

Prep the rest of the ingredients while the cauliflower is in the oven. When the cauliflower comes out of the oven, toss the beans and turkey pieces with the cauliflower and sprinkle the grated cheese over the top. Put the pan back in the oven to melt the cheese, about 5 minutes.

After the cheese is melted, you can top your Turkey Cauliflower Nachos with your favorite nacho toppings. I have a can of drained fire-roasted tomatoes, pickled jalepeรฑos, minced shallot, toasted pine nuts, and fresh chopped cilantro. Top your nachos and grab a fork!
