<outfit post> step into fall
due to my husband’s career, my family had the opportunity to live in many different cities across the States, and the world. but there will always be a special place in my heart for Texas. all three of my sons were born in the Lone Star State and grew up with a love for country music, rodeos, and Tex-Mex cuisine. as a matter o fact, we still love an old fashioned Texas BBQ with mariachi music playing in the background, pitchers of sangria, bottles of cold beer, plates mounded high with tender brisket, bowls of fresh pico de gallo, cole slaw, guacamole, tortilla chips…my mouth is watering as i type. to start the festivities off i typically serve an appetizer or two. a favorite in our household is a corn dip that i am happy to share with you. i usually double the recipe as it disappears quickly! and, what would any BBQ need besides amazing food, you ask? an outfit to compliment the occasion. over twenty years ago, when living in Houston, TX, my husband bought the jacket that i chose for today’s ootd. it is still one of my all-time favorites. i was thrilled to pull this old friend out of the closet today. silly as it may sound this one jacket represents so many memories to me. hello, September, it’s time to step into fall.
corn dip:
2 cups shredded cheddar cheese
1 can (11 ounces) yellow and white whole kernel corn, drained
1 can (11 ounces) Mexicorn, drained
4 ounces shredded pepper jack cheese
1/4 cup chopped green onions
1 can (4 ounces) chopped green chiles
1 jalapeno pepper, seeded and chopped
3/4 cup mayonnaise
3/4/ cup sour cream
combine and serve with tortilla chips
