Hello and welcome to Kelly’s Kitchen.  Temps are cooling here in Athens as Halloween is right around the corner.  I’ve had the chance to put on the fireplace a few times already this year, which is just to say, I can’t complain about the cooler weather.  So in the spirit of cold weather, today I’m sharing 6 comfort recipes for Fall.

1. Smoked Meatloaf & Cauliflower Mashies

Hi Everyone, welcome to Djalali Cooks. I am so happy you’re here today! This meal has been on my mind for a few weeks now and now I know why. This meatloaf is the best meatloaf I have ever had. Every time I have been to a barbecue joint that has meatloaf on the menu, I always think, “Yeah, right. Meatloaf. I am here for the ribs, or the pulled pork. Not something I can make easily at home.” Well, shame on me because it’s taken me 40+ years to realize that smoked meatloaf is something unto itself; separate from the rest. A revelation.

2. How to Make Bolognese Sauce

Hello, welcome to Sunday Supper! Today we have Lamb Bolognese with Bucatini. Inspired by the Ingredient Spotlight on Italian Pasta and my thoughts on alternative, yet no less special, Thanksgiving dinner ideas. This slowly simmered sauce filled my kitchen with its comforting aroma, making the final dish such a special treat. Perfect for a Sunday Supper or an untraditional Thanksgiving dinner – This is How to Make Lamb Bolognese Sauce.

3. Chicken Noodle Soup

Hello and welcome to Sunday Supper! We are back in Athens and it’s nice to be home, but I will say that we are already missing Tybee. To soften the re-entry to the regular day-to-day, I think some Chicken Noodle Soup is in order. I asked Alex to smoke a chicken for this recipe and I am glad I did, because while I would have been happy with a store-bought rotisserie chicken, the smoked chicken really added a ton of amazing flavor. The other incredible flavor boost in this soup is dill. A lot of dill.

4. Not So Instant Ramen

Hello and welcome to Sunday Supper! Sometimes I really don’t feel like cooking. And that’s when I make my go-to: Instant Ramen. But, I don’t just boil some water, toss in the seasoning packet and the hunk of noodles and call it dinner. No, I like to make it a little more special. Sure, there are a few more steps, but they’re just as easy as sprinkling in a seasoning packet. Step one: throw away the seasoning packet (or save it for sprinkling on popcorn!). Let’s get to it: Not-so-Instant Instant Ramen!

5. Shepherd’s Pie

Hello Friends, welcome to Sunday Supper – on Saturday! Today we are revisiting a great recipe for a cold day. A classic casserole with a healthy twist; savory, herby meat and veggie filling topped with creamy and fluffy Cauliflower Mashies make this Shepherd’s Pie a lighter take on the original.

Shepherd’s Pie is great, but I never make it because of the mashed potatoes. Don’t get me wrong, I love mashed potatoes, but they’re heavy. I was so happy with the flavor and texture of the Cauliflower Mashies we made with our Smoked Meatloaf, I wanted to use them to top this Shepherd’s Pie, in place of mashed potatoes. What a revelation!

6. Mushroom Pot Pie

Hello, Welcome Friends! As November nears, I start thinking about Turkey Day. I am not a crazy planner, but I like to have some idea of what to cook on the big day – the Super Bowl of cooking that is Thanksgiving. More than the turkey itself, which Alex handles because he likes to deep fry or smoke the bird, I like to think about the sides. Today’s Mushroom Potpie struck me as not only a great side, but as a great vegetarian option for the main course – skipping the Tofurkey and other meat impersonations and going straight for something that can stand on its own. Shall we get to it?

    So many gteat recipes here. Do you have an archive? Last January you saved the day with your instant pot lemon chicken thighs. My hubby and I were in VRBO with a minimal kitchen and my instant pot. I entertained using that recipe and wowed my grandkids! Can’t find it in your blog site.

      Hi Barbara, I think it was the One Pan Chicken with Lemons and Feta or the Sheet Pan Mediterranean Chicken you’re remembering. I don’t think I have an Instant Pot chicken thighs recipe…I do have archives of all the recipes on djalalicooks.com, you can search by month in the side bar or type in the dish you’re thinking of to get the recipe.
