Let’s start with the drink, because sometimes you need a little something bubbly in hand before you start cooking. The Rosemary Spritz is our answer to holiday cocktails that taste special without requiring a home bar’s worth of ingredients. It’s light, citrusy, and beautifully herbaceous — the kind of drink that feels festive but won’t weigh you down before the big meal.


🥂 Beth’s Tip: For a pitcher version (serves 6-8), combine 1 bottle Prosecco, 1 cup club soda, 3/4 cup elderflower liqueur, 1/4 cup lemon juice, and 1/4 cup simple syrup in a pitcher. Add rosemary sprigs and serve over ice.

A refreshing blend of Prosecco, elderflower liqueur, fresh lemon, and aromatic rosemary.
Makes: 2 Cocktails
Prep Time 5 minutes

Ingredients:  

  • 6 oz Prosecco or sparkling wine chilled
  • 4 oz club soda
  • 2 oz elderflower liqueur St. Germain
  • 1 oz fresh lemon juice
  • 1 oz simple syrup or to taste
  • 2 sprigs fresh rosemary
  • Lemon wheels or twist for garnish
  • Ice

Instructions: 

  • Prepare glass: Fill a wine glass or large stemmed glass with ice.
  • Muddle rosemary (optional): Gently muddle a few rosemary leaves in the glass to release oils, or simply add the whole sprig.
  • Build the drink: Add elderflower liqueur, lemon juice, and simple syrup to glass.
  • Top with bubbles: Pour in Prosecco, then top with club soda. Gently stir to combine.
  • Garnish: Add a fresh rosemary sprig and lemon wheel.
  • Serve immediately while bubbly and cold.

Tips/Notes

Variation: Add a splash of grapefruit juice for a pink, citrusy twist!

These stuffed mushrooms have been in my entertaining rotation for years, and for good reason — they’re the rare appetizer that manages to be both crowd-pleasing and sophisticated. The filling is rich with garlic, Parmesan, and fresh herbs, while the mushrooms themselves become tender and savory in the oven. Best of all? You can assemble them hours ahead and just pop them in the oven when guests arrive.

Stuffed Mushrooms with Parmesan & Herbs

Bite-sized mushrooms filled with a savory mixture of breadcrumbs, garlic, Parmesan, and fresh herbs.
Makes: 10 Servings
Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients:  

  • 24 large white or baby bella mushrooms about 1.5-2 inches in diameter
  • 3 tablespoons olive oil divided
  • 3 cloves garlic minced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese plus more for topping
  • 2 tablespoons fresh parsley finely chopped
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried
  • 1 teaspoon fresh rosemary finely chopped (or 1/2 teaspoon dried)
  • 1/4 cup cream cheese softened (optional, for creamier filling)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Prep the mushrooms: Clean mushrooms with a damp paper towel. Remove stems and finely chop them. Set caps aside.
  • Make the filling: Heat 2 tablespoons olive oil in a skillet over medium heat. Add chopped mushroom stems and garlic. Sauté for 3-4 minutes until softened and moisture has evaporated.
  • Combine ingredients: In a bowl, mix sautéed mushroom stems and garlic with panko breadcrumbs, Parmesan, parsley, thyme, rosemary, and cream cheese (if using). Season with salt and pepper. The mixture should be moist but hold together.
  • Stuff mushrooms: Brush mushroom caps with remaining 1 tablespoon olive oil. Spoon filling generously into each cap, mounding slightly. Sprinkle extra Parmesan on top.
  • Bake: Arrange stuffed mushrooms on prepared baking sheet. Bake for 18-20 minutes until mushrooms are tender and tops are golden brown.
  • Serve: Garnish with fresh parsley and serve warm.
