Welcome to Kelly’s Kitchen! I haven’t made a pizza in a while and summer corn hitting the supermarket shelves inspired me to make a summer corn pizza because corn on pizza is super underrated, it’s one of the most amazing pizza toppings of all time! It goes with so many other ingredients, you can get really creative and it adds a really nice savory/sweet component. Let’s jump in!
Today we are making Summer Corn Pizza

This summer corn pizza has homemade pesto (another great summer ingredient!), mozzarella, a provolone/asiago/Parmesan cheese blend, shallots, and then topped with pickled onions and fresh basil leaves.
Preheat the oven with a pizza stone or steel to 450º F.
Fresh corn is the best way to go, but you can use frozen too. Slice the corn off of two corn cobs and set aside.
Roll, stretch or spin your pizza dough out on a wooden pizza peel. Spread the pesto out on the dough, leaving a 1-inch border for the crust.
Top with mozzarella cheese and then scatter the diced shallot over the top.
Sprinkle the fresh corn over the shallot and top with the provolone/asiago/Parmesan blend.
Pull the pizza from the oven with a metal pizza peel and top the baked Summer Corn Pizza with fresh cracked black pepper, the pickled onions and fresh basil leaves.
This pizza is so easy and satisfying! The basil pesto and corn is such a wonderful summer flavor combination. The pickled onions balance the flavors and add a crisp bite to the flavor combination. I hope you give this pizza a try, it’s such a wonderful summer recipe! Take care and be well, xo Kelly
1. A Pizza Steel is the optimal way to cook pizza in your oven. It's durable, heats evenly, and will last a lifetime.
2. Be sure to use a good amount of flour on your wooden pizza peel to keep your pizza from sticking to the peel.
3. If you like a little heat, swap the pickled onions for pickled jalapeños.
