This is such a perfect recipe for a dinner party side or appetizer, not only because it’s so easy to prepare ahead of time, but it’s also really easy to make this a standout recipe with your own creative flourishes. I am finishing this recipe with balsamic glaze, but pomegranate syrup is another delicious finishing touch. You can forgo the glaze and top with chopped preserved lemon for an umami-rich savory kick. To give the dish a pop of color and fresh tart flavor, you can top the finished dish with beautiful jewel-toned pomegranate seeds.
How to Make Prosciutto Wrapped Asparagus
Give yourself plenty of time for the careful job of wrapping the fresh asparagus bundles. The presentation of this dish is one of the most important parts of this being a standout side dish or appetizer. Having neatly wrapped asparagus will have your guests clamoring to get a taste of such a beautiful dish.
Prosciutto Wrapped Asparagus Ingredients
1 Bundle Fresh Asparagus Spears (about 30 spears)
ยฝ of an 8-oz. Package Block Feta, plus more for crumbled garnish
1 ยฝ packages of Prosciutto di Parma (10 slices)
Olive Oil
ยผ cup Raw Pistachio Nut Meats, chopped fine
ยฝ tsp. Dried Thyme
ยฝ tsp. Crushed Red Pepper Flakes
Balsamic Glaze
Prosciutto Wrapped Asparagus Instructions
Step 1
Preheat the oven to 450ยบ F. After washing the fresh asparagus, gently pat it dry and line up the asparagus spears, all facing the same direction. Then trim the woody ends off, ensuring the asparagus spears are all just about the same length.
Step 2
Pair up the asparagus spears in bundles of two to three. If you have thin asparagus spears, create bundles of three or four.
Step 3
Carefully slice the feta into โ -inch slices and top each bundle with a slice of feta.
Step 4
Spread olive oil on the surface of the sheet pan with a paper towel to create a thin layer of oil.
Step 5
Place a single slice of prosciutto flat on your work surface. Take one feta-topped bundle and place it near the top of the prosciutto slice. Fold the top part of the prosciutto slice over the cheese, then work from the bottom of the prosciutto slice to wrap the meat over the bundle.
Step 6
Repeat with the remaining bundles, place each wrapped asparagus bundle on the prepared baking sheet.
Step 7
Drizzle more olive oil over the prosciutto-wrapped bundles and bake for a cook time of 10 minutes, checking on the browning about halfway through. They are finished when the roasted asparagus is tender and the prosciutto is crisp.
Step 8
While the asparagus is baking, finely chop about ยผ cup of raw unsalted pistachio nuts. Toast the nuts in a dry nonstick skillet over medium heat, shaking the pan regularly, until toasted, about 3-4 minutes. Toss the toasted nuts in a small bowl with a drizzle of olive oil, and a pinch each of dried thyme and crushed red pepper flakes. Set aside.
Step 9
When the Prosciutto Wrapped Asparagus is cooked, carefully transfer the bundles to a rectangular serving platter. Drizzle with olive oil and balsamic glaze. Top with crumbled feta. Lastly, sprinkle the toasted, herbed pistachios over the top.
Tips for Preparing Prosciutto Wrapped Asparagus
1. Try to use the thin asparagus spears. The skinny asparagus spears will make for easier eating.
2. Regardless of the width of your asparagus spears, try to use asparagus spears that are roughly the same width so each bundle will have evenly cooked asparagus.
3. When wrapping the asparagus bundles in the thin slices of prosciutto, use cold prosciutto. As the prosciutto comes to room temperature it becomes increasingly difficult to separate the slices without tearing them.
4. While I am using pistachio nuts tossed in thyme and crushed red pepper to top my Prosciutto Wrapped Asparagus, feel free to mix things up with a different nut. Just be sure to chop the nuts semi-fine, toast the nut pieces and toss the toasted nuts in your favorite mix of dried herbs. Try oregano, or herbs de Provence.
