Happy Saturday! Today I am bringing you 6 Great Breakfast Recipes. All of these are perfect for 2 people, and can easily work for a group with a little scaling (in some cases). I love breakfast food, though I rarely eat it before noon! Personally I think breakfast works anytime of day. In this collection of recipes, I have 3 savory and 3 sweet recipes - though you can go either way with the crepes and the Dutch Baby. All 6 are great brunch ideas!
I always love brunch more in the spring and summer; and I suppose this is because it affords the opportunity to sit outside. The idea of occupying a table for a few hours sipping coffee (then a cocktail) and slowly making my way through savory (then sweet) breakfast dishes is my ideal way to spend a lazy Sunday.

Crepes are so simple to make yet I always felt like it was a production. I think because I assume there has to be a buffet of toppings; sweet ingredients to prep, savory ingredients to prep. I also thought I needed at least a few people to eat it all. But no. It’s nice to have a variety of toppings but it’s not necessary. And crepes keep really well wrapped up in the fridge, which makes them fun meal prep. I can stuff them with anything I want (hello, leftovers). So what was I waiting for? It’s Super Easy Crepes, y’all.
I am calling today’s recipe Anytime Strata because this strata is great for brunch, breakfast, lunch or dinner. A strata is an egg casserole, layered with meat, cheese, bread and veggies. Serve it with a side salad to round out your meal and you’ve got a super easy, make-ahead meal. This recipe serves four, or two with leftovers. But the great thing about it is that if you’re cooking for one, this is easy meal prep to get you through the week.
We are lightening things up a bit today. Whole grain granola with plain yogurt and honey is one of my favorite light meals to have any time of day. I am always disheartened by how much sugar is in the store-bought varieties, so I never buy it at the grocery store. When the craving for granola struck, I decided to take matters into my own hands and make my own.
There are three things we always have on hand, in the fridge; eggs, Mexican chorizo and corn tortillas. And it just so happens that the combination of these three items makes a perfect breakfast. Easy, quick and delicious, these simple Street-Style Breakfast Tacos can be topped with onions and cilantro. You can toss on some cheese, if you like. Today, I am going with a little Mexican crema and hot sauce.
Let’s start this week off with a little sweetness. I love a Dutch Baby because it can go sweet or savory and it’s so simple – and fun! The puffy shapes it bakes into are weird and wonderful; it feels too special to be so simple! I had some gorgeous strawberries, so I decided to do a Sweet Dutch Baby with Balsamic Strawberry Compote.
Hello and welcome to this special Saturday edition of Djalali Cooks. Today’s post is in lieu of a Sunday Supper post tomorrow, so I thought we’d have a little week-end clean out the fridge inspiration. There are many ways to use up leftovers, like yesterday’s Beer Brat Pizza, a breakfast burrito is another great way to throw a bunch of random leftovers together. Mix up those leftovers with eggs and cheese, wrap it in a warm tortilla, it’s as easy as that!
