Ingredients
2 Ripe Peaches
1 pint Cherry Tomatoes, halved
2 Balls of Burrata
Fresh Basil
Flaky Finishing Salt
Dressing
1/3 cup Olive Oil
1/4 cup Lemon Juice or Apple Cider Vinegar
Kosher Salt and Black Pepper
Mixed Fresh Herbs, chopped
Instructions
Combine the dressing ingredients in a jar and shake vigorously to combine and emulsify, set aside.
In a bowl, combine the sliced peaches and tomatoes. Pour a little dressing over the fruit and lightly toss to coat.
Transfer the dressed fruit to a serving platter.
Break the burrata balls apart, over the top of the dressed fruit.
Sprinkle with flaky finishing salt and more pepper.
Scatter the fresh basil leaves over the top.
