Happy Friday, gang! We are cruising through March at breakneck speed—we’re already halfway through! St. Patrick’s Day is Sunday, and if you missed our nod towards St. Paddy’s Day, check the post out here. This week, I started spring cleaning outside and in, and I have a brand-spanking new roof. I chose black shingles to match the exterior to a T. I had the driveways, sidewalk, and patios power-washed, so the outside areas are coming together. I must admit I love spring when the earth awakens from its winter slumber, the earth renews, and nature comes alive.

Today, Kelly and I are kicking off the weekend with a delicious cocktail, Bitter French, and a yummy grilled cheese sandwich. I slipped into a pair of high-waisted white denim from Talbots and a navy blue linen shirt from J. Crew.

Navy and white are a great spring and summer color combo. It's crisp and clean. I am a big fan of J. Crew’s linen blouses, shorts, and pants. I spotted this linen maxi dress, perfect for a warm-weather getaway.

I just love how ponte skinny pants can be dressed up or down, and everything in between. Today I went for a sporty spring look with Gola Sneakers from Talbots and a striped tee from J.Crew.

The pants I am wearing are actually from Vince. Still, the version from Quince is pretty much identical – a perfect dupe, with a quality of material and craftsmanship that is made to last.

The Bitter French is a take on the classic French 75, which is a citrusy champagne cocktail. This version gets a little bitterness from the Campari, which is our favorite Aperitif. So this combination was sure to be a winner with us! It's a light, perfectly pink spring cocktail.
Makes 2 Cocktails
4 oz. Gin
1 oz. Campari
2 oz. Simple Syrup
2 oz. Lemon Juice
Top with Prosecco or Champagne
Grapefruit Twist, garnish
Shake all but the grapefruit twist and bubbly in a cocktail shaker with ice until very cold. Strain into a flute or coupe glass and top with bubbly. Garnish with a grapefruit twist.
This amped-up grilled cheese takes spring onions or scallions and sautés them with mushrooms and garlic to create a savory, delicious addition to the nutty Fontina cheese and thick-sliced Italian bread.
Makes 3 Sandwiches
8 oz. Mushrooms, chopped
Olive Oil
1 bunch Scallions
1 Clove Garlic, minced or pressed
8 oz. Grated Fontina Cheese
6 Slices of Bread
1-2 tbsp. Butter
Olive Oil
Sauté the mushrooms in about ½ cup water until the water is evaporated. Then add a tablespoon of olive oil to the pan and add the scallions to the pan. Sauté the mushrooms and scallions, adding more olive oil as needed, stirring occasionally until the onions and mushrooms begin to brown. Remove from heat.
Melt the butter over medium-low heat in a separate nonstick pan. Place two bread pieces in the pan and top with grated Fontina, top with mushroom and scallion mixture, and place the top slice of bread.
Flip the sandwich when the bottom slice is golden and toasted, toast the other side. When that side is golden, remove from heat and serve.
