All right, gang, this is the last Friday in March. How did that happen? Since Easter is early this year, Good Friday falls in March. While this religious holiday isn’t a Federal holiday, it could be a State holiday (Georgia recognizes Good Friday as a State holiday) when State government offices and some schools and businesses are closed. Good Friday is one of the most important days in the Holy Week, which begins on Palm Sunday and ends on Easter Sunday.

Kelly and I are kicking off Easter weekend with a delicious cocktail that reminds me of Sangria. I loved the Leek and Blue Cheese Toasts, which just has Spring written all over it. The family descends on my house Saturday morning as Chelsea, Kelly, and I film three more Message from Mom podcasts that drop every Saturday. Today, I slipped into an oversized white blouse that’s popped over Frank and Eileen’s best-selling billion-dollar pants that live up to the hype! Since it’s pedicure season, it’s time to slip into a pair of sandals and show off my latest color - purple.

Beth has worn her pair of the Sailor Slim Wide Leg Chino Pants from J.Crew on repeat so far this spring, so I decided to go for a pair of them in petite. And I have to say that I can see why Beth wears hers all the time! These pants are so comfortable and go with nearly everything in my closet.

While the English translation of this cocktail sounds a little daunting, it's a light, low ABV, refreshing red wine cocktail that is reminiscent of sangria, minus all the fruit!
Makes 2 Cocktails
2 oz. Campari
4 oz. Red Wine
1/2 oz. Honey Syrup
2 oz. Sparkling Lemonade
Combine the first three ingredients in a rocks glass over ice. Stir and top with lemon soda, garnish with orange slice
This appetizer or side is perfect for spring. Spring alliums are going strong right now and this is a great way to highlight the leek. Sweet and savory, these blue cheese toasts were a big hit with us!
~3 Cups Sliced Leeks, white and light green parts, sliced in 1/4” rounds
2 tbsp. Unsalted Butter
1 tbsp. Olive Oil, plus extra for brushing toasts
Coarse salt
Freshly Ground Black Pepper
Baguette Sliced into 1/2-inch thick slices
2 oz. Blue Cheese, crumbled
Few Drops of Lemon Juice (optional)
Fill a large bowl with cold water. Add leeks and use your hands to pump them up and down in the water a bit, separating the rings and letting the dirt and grit fall to the bottom. Transfer to a dish or plate for a minute; no need to dry them.
Meanwhile, heat a large, heavy skillet over medium. Once hot, add butter and olive oil and once they’re fully melted and a bit sizzly, add the leek slices, still wet.
Sprinkle with 1/2 teaspoon coarse salt and a few grinds of black pepper. Reduce heat to low, cover with a lid and cook leeks for 25 minutes, stirring them occasionally. Adjust seasoning to taste.
While leeks cook, brush bread slices with olive oil and sprinkle with coarse salt. Run under broiler until lightly toasted.
Spread the cheese on the toasts.
Divide leeks among toasts. Sprinkle with a little more cheese.
Add a few drops of lemon juice, if desired.

It’s hard to know if you want to know or not, but … when you say bust the “myth that mothers-in-law aren’t monsters-in-law,” you actually mean bust the myth that mothers in law ARE monsters in law. It’s a double negative the way you’ve been using it, which means MILs are monsters.
LOL! On the podcast I add the adverb “necessarily” which was omitted in the blog post which negates the double negative. But I appreciate you reading every word that’s written! Enjoy your weekend!
