Ingredients
1 Granny Smith Apple, quartered and sliced thinly
1 Fresh Fennel Bulb, halved and sliced thinly
1 Shallot, sliced thinly
4-6 Radishes, sliced thinly
Pomegranate Seeds
Toasted Pecans, roughly chopped
Dressing
1/4 cup Olive Oil
1/3 cup Apple Cider Vinegar
1-2 tsp. Dijon Mustard
Kosher Salt and Pepper to taste
Instructions
Combine the dressing ingredients in a jar and shake vigorously to emulsify. Add some dressing to a medium bowl. Transfer the apple slices to the bowl and toss to coat the apple slices in the dressing.
Then add the fennel slices, shallot slices, and radish slices. Pour on the rest of the dressing and toss to combine.
Transfer the salad to a serving plate and scatter the pomegranate seeds and toasted pecan pieces over the top.
