and just like that, it’s friday! this sunday is a special day for the dad in your life. so treat him with some extra TLC and a yummy meal. a backyard barbecue is always a good idea, especially this time of year when we love to spend every minute outdoors. but if you’d rather whip up something in the kitchen, how does a sausage burrito sound? today, i’m dishing up brunch with a mexican twist alongside a jalapeño margarita sure to please dad.

the weather has been oh so delightful in georgia this week with blue skies, sunshine, and low humidity levels. we’ll take it! with temps like this it makes it easy to spend time outdoors puttering in the garden. oscar’s buddy pax came over for a play date. boy do these two have fun together. by the time pax headed back home, they were both pooped from all their romping and tussling around the yard.

Jalapeño Margarita

  • 2 ounces tequila
  • 3 tablespoons lime juice (freshly squeezed)
  • 1 ounce Cointreau
  • 1 ounce agave nectar
  • 1 jalapeño, sliced
  1. Rim a glass with lime juice and salt.

  2. Fill glasses with ice and slice the jalapeño.

  3. Combine tequila, lime juice, Cointreau, agave nectar and sliced jalapeño in a cocktail shaker filled with ice.

  4. Shake vigorously.

  5. Strain into glasses. Garnish with a lime wedge and jalapeño slice.

Sausage Burrito

  • 1 package of sausage
  • 4 eggs
  • 1 red pepper
  • 1 green pepper
  • 1 sweet onion
  • 2 tablespoons olive oil
  • 4 flour tortillas
  • 1 avocado
  • 1 Queso Fresco
  1. Chop the sausage, onion, and peppers. Add to the skillet heated with olive oil.

  2. Toss ingredients until sausage is brown and the vegetables are golden.

  3. Whip the eggs in a small bowl. Add to sausage mixture and scramble the eggs.

  4. Spoon mixture onto the flour tortillas.

  5. Dice the avocado and place on top of sausage and egg mixture.

  6. Crumble the Queso Fresco over the sausage and egg mixture.

  7. Add salsa, sour cream or any other condiment of your choosing.

Oscar and Pax look like they are having so much fun. When my son’s dog comes to visit he sneaks next door to play with the dogs that live there. Dogs are so much more social than cats. Love your backyard. I’m trying to do some landscaping but good help is hard to find

      landscape. landscapers are hard to come by. it took two years before i found a crew that wanted to get paid! ha!
