and just like that, it’s friday! this sunday is a special day for the dad in your life. so treat him with some extra TLC and a yummy meal. a backyard barbecue is always a good idea, especially this time of year when we love to spend every minute outdoors. but if you’d rather whip up something in the kitchen, how does a sausage burrito sound? today, i’m dishing up brunch with a mexican twist alongside a jalapeño margarita sure to please dad.
the weather has been oh so delightful in georgia this week with blue skies, sunshine, and low humidity levels. we’ll take it! with temps like this it makes it easy to spend time outdoors puttering in the garden. oscar’s buddy pax came over for a play date. boy do these two have fun together. by the time pax headed back home, they were both pooped from all their romping and tussling around the yard.
today’s ootd is fit for a casual day. and isn’t that what fridays are all about? this cute embroidered tee (old, similar here and here) is from Anthropologie. the denim paper bag shorts with removable belt is Ralph Lauren available at Macy’s. i’m a big fan of this comfortable silhouette for warm weather. these paper bag shorts also come in a linen pinstripe that looked adorable. Jack Rogers sandals are a favorite of mine. if there is a quintessential pair of preppy summer sandals, it has to be Jack Rogers. years ago; this iconic shoe was made famous by beloved first lady jackie kennedy. legend has it that while vacationing in italy in 1960, she fell in love with a whipstitched sandal with a rondelle detail. upon returning to the states, she gave a pair to her cobbler in palm beach to copy. when her friends spied jackie wearing said sandal, they immediately clamored for their very own. and so, a perennial preppy classic was born.
Rim a glass with lime juice and salt.
Fill glasses with ice and slice the jalapeño.
Combine tequila, lime juice, Cointreau, agave nectar and sliced jalapeño in a cocktail shaker filled with ice.
Strain into glasses. Garnish with a lime wedge and jalapeño slice.
Chop the sausage, onion, and peppers. Add to the skillet heated with olive oil.
Toss ingredients until sausage is brown and the vegetables are golden.
Whip the eggs in a small bowl. Add to sausage mixture and scramble the eggs.
Spoon mixture onto the flour tortillas.
Dice the avocado and place on top of sausage and egg mixture.
Crumble the Queso Fresco over the sausage and egg mixture.
Add salsa, sour cream or any other condiment of your choosing.
