it’s friday! which means there are eleven more days to get your christmas shopping finished. can you believe we are halfway through the holiday season? before you know it, old man winter will be knocking on our door, and 2019 will have arrived. is anyone thinking about new years eve yet? any plans or outfits selected? but before we get ahead of ourselves let’s enjoy all things christmas, including a scrumptious christmas martini we concocted this week. and i’m wearing a festive jingle belle striped tee and darling red truck car loafers from Talbots that are certainly merry and bright. add oscar and ollie into the mix, and i’d say this friday is off to a good start. next friday i’ll have all three kiddos under one roof. guess who’s counting the days?
oscar particularly loves the treats that came in his BarkBox subscription. they’re called Chew on this Pork. they’re wheat free, soy free, corn free, and grain free which is perfect for this guy as he has allergies and we keep him on a strict diet.
once winter arrives, you’ll find ollie snuggled on a blanket or in front of a heating vent. this girl does not like cold weather.
Mistletoe Christmas Martini
- 1.5 oz vodka
- .75 oz cherry brandy
- juice of 1 lime
Rim a Martini glass with sugar. Fill your cocktail shaker halfway with ice and pour in the ingredients. Shake until chilled and strain the mixture into the glass. Garnish with two raspberries and spring of rosemary.
it doesn’t get any easier than a one-pot meal. and that’s what mr. style and i tend to gravitate towards when it’s cold outside. the egg noodles are from Trader Joe’s.
One Pot Beef Stroganoff
A hearty but light soup perfect for a cold winter day.
- 2 tbsp unsalted butter
- 1 pound beef sirloin thinly sliced
- salt and pepper
- 8 ounces crimini mushrooms sliced
- 1 medium sweet onion diced
- 3 cloves garlic minced
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 5 cups low-sodium chicken or beef stock
- 1 1/2 cups dried egg noodles
- 1/2 cup sour cream
- 2 tbsp flour
- fresh parsley chopped
In a large or dutch oven, melt butter over medium-high heat. Sprinkle the meat with some salt and pepper to taste; add to the pot and cook until browned. Using a slotted spoon, transfer meat to a bowl; keep warm.
Add the mushrooms, onion, and garlic; saute until the vegetables have softened, about 3 minutes. Stir in the tomato paste and Worcestershire sauce. Pour in the chicken (or beef) stock and bring to a boil. Add in the noodles. Reduce heat to a simmer and cook for 5-7 minutes until al dente.
In a bowl or large measuring cup, combine the sour cream and flour. Whisk in 1 cup of hot soup; pour mixture back into the pot. Cook and stir for 1-2 minutes to thicken. Add cooked meat back to the pot and heat through. Taste, and adjust seasoning with a little more salt and pepper, if necessary.
Serve in individual bowls with some fresh chopped parsley.
