Ingredients: 4 Tbsp. extra-virgin olive oil divided; 8 oz. cremini mushrooms sliced; 1 yellow onion finely chopped; 4 garlic cloves minced; 1 tsp. kosher salt; 3/4 tsp. crushed red pepper flakes; 1/2 tsp. grated nutmeg; 4 oz. tomato paste; 1/2 cup vodka; 1 cup canned pumpkin puree; 3/4 cup canned coconut milk; 1 lb. dry penne pasta; 1 bunch kale stemmed and roughly chopped; 2 Tbsp. fresh thyme leaves; Freshly grated Parmesan cheese for garnish

2 oz vodka
4 oz sparkling apple juice
1 can ginger beer
fresh cranberries and sliced apples for garnish
