Makes 2 Cocktails


Ingredients

Spicy Ginger Syrup

1/2 cup Water

1/4 cup Honey

1-inch Piece of Fresh Ginger, sliced

1/2 tsp. Cayenne Pepper

8 Mint Leaves

Paloma

1/2 cup Pomegranate Juice

1/2 cup Grapefruit Juice

Juice of 1 Lime

4-6 tbsp. Spicy Ginger Syrup

4 oz. Tequila

Ginger Beer, to top

Tajin Seasoning, to rim glass

Mint Leaves, to garnish


Instructions

Spicy Ginger Syrup

Combine the water, honey, ginger slices, and cayenne pepper in a saucepan. Bring to a boil and then reduce to simmer. Simmer for about 2 minutes, then cut the heat and add the mint leaves. Cover and let steep for 10 minutes. Strain into a jar and let cool. Set aside. 

Pomegranate Ginger Paloma

In a cocktail shaker filled with ice, add the tequila, pomegranate juice, grapefruit juice, lime juice, and spicy ginger syrup. Shake until very cold and strain into rocks glasses, rimmed with Tajin seasoning and filled with ice. Garnish with mint leaves.
