Prep the dates: If your dates aren't already pitted, use a small knife to slice them open lengthwise and remove the pit. Be careful not to cut all the way through.

Stuff the dates: Spoon about 1 teaspoon of the cheese mixture into each date. Press gently to close.
Wrap with bacon: Wrap each stuffed date with a half slice of pre-cooked bacon, securing with a cocktail pick.
Arrange on baking sheet: Place wrapped dates seam-side down on the prepared baking sheet.
Bake: Roast for 15-18 minutes, until the bacon is crispy and the dates are warmed through.
Drizzle and serve: Transfer to a serving platter, drizzle with balsamic glaze, and serve warm.
