it’s a long weekend, gang! labor day has arrived and with it a bittersweet farewell to summer. some of us might be bitten by the travel bug and head out of town on a three-day trip. others might stay home and fire up the grill for a barbecue, laze around the house or sip a drink poolside. whatever your plans may be – enjoy! mr. style and i and the critters are staying home this weekend as we’ll be flying to florida next thursday for five days of fun in the sun. 

today’s classic cocktail is perfect for a hot summer day. anyone remember long island iced tea? to be honest, i haven’t slurped one down in years. and i do mean slurp because these drinks are tasty if not a bit potent. one glance at the ingredients and you know this drink means business. nonetheless, it’s a lovely addition to any summertime gathering. just pace yourself…

high rise jeans from J.Crew are back in action after a summer hiatus. many of you know i’ve been keen on adding dresses to my closet this year. add blouses to that list. this top from Anthropologie was purchased for our florida trip. it has a matching skirt. but i couldn’t wait to wear it, so you get a sneak peek so to speak of an outfit coming your way in a week or two. this halter top looks adorable with white skinny jeans or white shorts.

Ingredients
  1. 1 ounce vodka
  2. 1 ounce gin
  3. 1 ounce white rum
  4. 1 ounce tequila
  5. 1 ounce Cointreau
  6. 1 ounce lemon juice
  7. ice cubes
  8. cola, to top up
  9. lemon slices for garnish
Instructions
  1. Combine the vodka, gin, rum, tequila, Cointreau, and lemon juice in a cocktail shaker and shake to mix. Strain into two highball glasses and top with cola. Garnish each glass with lemon slices.

Ingredients
  1. 6 bone-in chicken thighs
  2. sea salt and freshly ground pepper to taste
  3. 3 teaspoons fresh rosemary leaves minced
  4. zest from 2 medium lemons
  5. splash of white wine optional
  6. 1-1/2 tablespoons olive oil
  7. 4 cloves garlic minced
  8. 1 cup cremini mushrooms sliced
  9. 2-3 sprigs fresh rosemary
  10. juice from 2 medium lemons
  11. 1 lemon sliced in rounds
Instructions
  1. Season chicken thighs with salt and pepper on both sides, minced rosemary and rub the lemon zest all over them.
  2. Heat 1 tablespoon of olive oil in a large skillet on medium-high heat. Lay the chicken skin-side down in the pan. Sear the thighs without moving them for about 4-5 minutes or until nicely browned (or blackened if you prefer). Turn the chicken over, add the juice of 1 lemon and cover and reduce heat to medium. Cook for another 8-12 minutes more (depending on the thickness of chicken) or until the chicken is cooked through. Remove chicken from skillet and set aside.
  3. Turn the heat to medium-high and add a teaspoon or more olive oil to the pan. Add the minced garlic and cook for about 1 minute, until fragrant. Add the mushrooms and saute for 2-3 minutes, until they are starting to brown. Add wine and allow to simmer for about 1 minute.
  4. Turn the heat to medium and add the cooked chicken back to the skillet. Top with remaining lemon juice, lemon slices and rosemary sprigs and cover pan once more for about 4-5 more minutes. Adjust seasonings as needed. Remove from pan and serve.

Avocado Greek Salad

For The Dressing
  1. ¼ cup olive oil
  2. 2 tablespoons lemon juice
  3. 1 large garlic cloves, minced
  4. 2 teaspoons dried oregano
  5. 1/4 teaspoon salt
For The Salad
  1. 1 large cucumber halved lengthways and sliced
  2. Grape tomatoes cut into half
  3. 1 green pepper seeded and sliced
  4. ½ red onion, chopped
  5. 7 oz good quality creamy feta cheese cubed
  6. ½ cup pitted Kalamata olives
  7. 1 large avocado diced
Instructions
  1. Whisk together dressing ingredients in jug or jar.
  2. Mix together all of the salad ingredients in a large bowl. Toss with dressing. Season with extra salt ONLY IF NEEDED - feta cheese is salty. Sometimes, I add romaine lettuce to the salad and sometimes I don't.

    I haven’t made a rosemary/lemon chicken in a while–looks great. I might have to pin this version with the thighs–sounds yummy. The first time I ever had a LI Iced Tea, I was so thirsty I slurped a good bit and oh, wow, did that hit me! Soooo good, but boy did I feel it, not realizing what all was in it. I love that drink.
