Happy Friday, ladies! The pine pollen has finally subsided in Georgia, so my screened porch was thoroughly cleaned from top to bottom. Honestly, the porch is one of my favorite rooms in the house in spring, summer, and fall. It’s a great place to entertain friends and family. With all of the trees surrounding the porch it almost feels as if you’re in a tree house! And I have a safe perch to watch the birds flit to and from my bird feeder to the bird bath. Is there anything better than watching flora and fauna, especially in spring? I think not! So, settle into spring with us today on Fridays with Oscar!

What I love most about matching sets is that they are separates that can be mixed and matched with other items in your wardrobe. Today is a prime example! I started with the linen pants, added a striped tee and white denim jacket, and now I have an entirely different outfit that’s perfect for a spring day!

I really like jeans with interesting details, which drew me to these Free People Jeans. The seams that run down the thigh from the pockets are a fun detail that sets these jeans apart. With a high waist and stretchy denim, these jeans are very comfortable! Since it's spring, it's time to break out the linen. This linen top is from last year, but there's a great version with the Bateau Neck Linen Top from Madewell.

A muddled Clementine orange gives this cocktail so much flavor and sweetness. It's not overly sweet, it has the beautiful flavor of fresh squeezed orange juice—a refreshing and delicious cocktail for spring.
Makes 2 Cocktails
2 Cutie Clementines, peeled, plus wedges for garnish
4 Sprigs Thyme, plus more for garnish
1 1/2 oz. Lemon Juice
1 oz. Honey Syrup
4 oz. Vodka
Muddle Clementines, thyme, lemon juice, honey syrup and vodka in a cocktail shaker, add ice and shake until very cold. Strain into rocks glasses with ice. Garnish with a Cutie wheel and a thyme sprig.
A simple Gochujang (Korean Chile Paste) sauce coats chicken thighs to create a flavorful main protein for rice bowls – with fresh greens, cucumber, and carrot dressed with a simple dressing. We air-fried the chicken thighs, which was not only a faster way to cook but also caramelized the gochujang paste.
Fresh, light, and full of flavor, this dish is great for a spring lunch or dinner.

1.5 lbs. Boneless Skinless Chicken Thighs
1.5 oz. Gochujang Paste
1-2 oz. Hot Water
~1/2 tbsp. Brown Sugar
Black Pepper to Taste
Rice Bowls
Cooked Rice
Fresh Salad Greens
1 Cucumber, sliced
1 Carrot, sliced or shredded
Sesame Seeds, for topping
Dressing
1 tbsp. Sesame Oil
2 tbsp. Rice Vinegar
2 tsp. Soy Sauce
1 tsp. Sugar
If baking, preheat oven to 400º F.
In a medium bowl, whisk together the gochujang paste, hot water, brown sugar and black pepper.
Add the chicken thighs to the marinade and toss to coat.
Place the sauced chicken thighs on a lightly greased baking sheet or air fryer basket.
Airfry the chicken for 15 minutes until cooked through. Or bake the chicken thighs for 20 minutes until cooked through.
For the dressing, in a jar, shake together sesame oil, rice vinegar, soy sauce and sugar.
Assemble the rice bowls with cooked rice, fresh greens, sliced cucumber, and shredded carrot. Dress the veggies with the dressing and then top with sliced chicken thighs and sprinkle with sesame seeds.

Whew, so glad to have the pine pollen gone. Don’t you hate the creepy little worm looking pollen pods left behind? Fortunately they disintegrate quickly.
